Chicken meat balls….for those who eat meat and are gluten free.

1 lb ground chicken
1 egg
1/3 cup Nutritional yeast
1 tb (or to taste) Italian seasoning
Garlic and onion to taste

Mix all. Divide in balls. Cook at 350 for 15 mins. Flip and cook 15 mins more.

We use quinoa and corn noodles with Spaghetti sauce or black bean noodles and steamed broccoli.

We have had to go on a mold free diet lately so I add about 1/2 cup finely chopped spinach and an extra egg instead of the nutritional yeast. You may not need the extra egg. I haven’t tried with just one doing it this way. They do not keep there shape as well, but taste good.
